After the Olives harvest some personal consideration around the different between Little Farm production and Big Farm/Food Industries.

We live on an island where agriculture is part of our life, but also here Food Industries impose their conditions for being competitive,  very often this “competition” is just stress more for have more quantity. Stress is also part of the life, but if you try to stress more than necessary a field, it will produce the best answer and it will be not positive.

I can say this after first 10 years experience, so, this is our choice: stress less and work more for have better, better quality, freshness, and sustainability.

Our olives are pressed and stored day by day to stay fresh and don’t loose its characteristic, time and air, like in wine, are the enemies to fight.
